Zucchini Pizza Bites

  • 12 TRISCUIT Crackers
  • ¼ cup shredded low-moisture part-skim mozzarella cheese
  • 12 thin zucchini slices (about 1/2 of 1 small zucchini)
  • 2 tsp. grated Parmesan cheese
  • 2 Tbsp. marinara sauce
  1. Heat oven to 350°F.
  2. Place crackers in single layer on baking sheet.
  3. Top with mozzarella, zucchini and Parmesan.
  4. Bake 5 to 7 min. or until zucchini is crisp-tender and mozzarella is melted.
  5. Drizzle with marinara sauce.

Sun-Dried Tomato and Goat Cheese Flatbread

  • 24 TRISCUIT Crackers
  • 1 pkg. (4 oz.) garlic and herb goat cheese
  • 12 sun-dried tomatoes, cut in half
  • ¼ cup shaved Parmesan cheese
  • 1 Tbsp. chopped fresh parsley
  • 2 Tbsp. honey
  1. Heat oven to 350°F.
  2. Place crackers, with sides touching, in single layer on parchment-covered baking sheet to form a rectangle.
  3. Top crackers evenly with goat cheese and tomatoes.
  4. Bake 5 min. or until goat cheese is softened.
  5. Top with Parmesan and parsley.
  6. Drizzle with honey.
